We go to the Fethiye market in the mornings and return to the campfire at sunset. Kayaköy's cold-pressed olive oil, the Aegean's fresh fish, the first artichokes of spring, the delicate pomegranates of autumn... Our cuisine follows the seasons.
Kassandra is an evening ritual nestled in the heart of Ölüdeniz, in the gardens of Kassandra Ölüdeniz. Hours begin in the shade of our garden, stretching into candlelight, between the tranquil surface of the pool and the silhouette of Babadağ mountain. The cuisine draws from two sources: the fertile lands of Fethiye and the age-old recipes of the Aegean. Every morning we go to the Fethiye market, visit the small producers of Kayaköy. Whatever the season brings; spring artichokes, summer purslane, autumn pomegranates… In the chef's hands, it is carefully, yet tirelessly, transformed into a dish. Here, a meal is more than just a meal. It's a way of slowing down an evening.
